Dried Lemons and Limes

An important part of our kitchen tool kit is dried lemons and limes. Hard and brittle, they can be blitzed to a fine powder in a blender, and used to flavour all sorts of dishes, especially Middle Eastern and Arabic ones; they can also be used whole to stuff chickens and flavour all sorts of soups and stews. They have a wide range of flavours, the darker ones usually having a more resinous taste. We buy them from a couple of Middle Eastern shops on and around London’s Edgware Road, like Al Mustafa supermarket at 135 Edgware Rd W2 2HR and Green Valley at 36-37 Upper Berkeley Street W1H 5QF (Green Valley have a range of packaged ingredients), but they are also available online (here, for instance). You can buy them ready powdered too in packets, some fine, some coarse, or loose by weight.
