Easy Chicken Quesadilla
1 cup of shredded Rotisserie Chicken
1/2 cup of grated, reduced fat cheddar cheese & monterrey Jack cheese
2 corn tortillas
To Garnish:
1/2 cup of red salsa
On a plate, assemble the quesadilla as follows:
-Place a corn tortilla on the plate.
-Spread the chicken evenly on top of the
tortilla.
-Spread the cheese evenly over the chicken.
-Place the second tortilla on top of the -
cheese.
Cook the quesadilla over medium heat in a small non-stick skillet for 3-5 minutes, until the cheese is melted.
To Garnish the quesadilla, on the side in a small bowl. Enjoy!
