Raita

Raita (yogurt with cucumber and mint)

From Madhur Jaffrey’s Indian Cooking

2-2/3 Cups plain whole yogurt (best quality)

1 small cucumber, peeled and coarsely grated

2 TB finely chopped mint

½ tsp ground roasted cumin seeds

¼ tsp cayenne (maybe even a bit less or do half now and more later as it can get warm)

1 tsp salt

Freshly ground pepper

Put the yogurt in a bowl and whisk it until smooth. Add the other ingredients, mix, cover and refrigerate.
