Garlic and Cilantro Green Beans
You will need:
One pound of frozen or fresh green beans (don't use canned beans)
2 Tablespoons Olive Oil
1/4 Cup Fresh Cilantro (chopped, don't remove all the stems because they contain a lot of flavor)
1 Tablespoon Minced Garlic (It's OK to add more)
Freshly Ground Black Pepper and Sea Salt (to taste)
How to Prepare:
Heat the olive oil on medium heat and add the garlic and green beans. Toss the beans gently until coated with the oil and garlic. Add salt and pepper. Reduce the heat and cover. Cook about fifteen minutes, Check a few times, because you will probably need to stir. Add the cilantro and cook about ten minutes longer or adjust time to your preferred degree of "doneness"

Cajun Style Blacked Cat Fish (Food.com)
1lb boneless catfish fillet
1teaspoon black pepper
1teaspoon garlic powder
1teaspoon onion powder
1teaspoon paprika
1teaspoon parsley flakes
1teaspoon ground red pepper
1teaspoon salt
1⁄2teaspoon oregano
1⁄2teaspoon thyme
butter or oil (for cooking)
NOTES: You MUST use butter or oil; margarine will not work.
A large cast-iron skillet works best for this, but any large non-stick skillet will work.
This recipe will work with nearly any type of boneless fish fillets, but catfish seems to be one of the tastiest.
This recipe produces a LOT of smoke, so make sure you have a good vent above your stove, or open some doors and/or windows.
Mix all dry ingredients together.
Coat fillets evenly with mixture.
Heat small amount of butter or oil in skillet until hot.
Place fillets in skillet.
Cook 3-5 minutes on each side.
Change butter or oil if it gets too black.

1lb ground beef
2 -3stalks celery, chopped
1small onion, chopped
1(8 ounce) can tomato sauce
1⁄4cup ketchup
1⁄4cup barbecue sauce (your favorite, we use Open Pit)
1tablespoon firmly packedbrown sugar
1teaspoon dry mustard
salt and pepper
1tablespoon Worcestershire sauce
1tablespoon vinegar
In a large skillet, brown ground beef, celery and onion.
Drain the fat, who needs it?.
Stir in remaining ingredients, simmer covered, 15-20 minutes, stirring occasionally.
If Joes appear too'loose', leave cover off and let moisture evaporate.
Cook until it's the consistency you like for serving on toasted buns, with french fries and cole slaw.
