Corn pudding
Serves 8. Estimated preparation time: 1 hour. Estimated cost: $10.
1 medium onion, chopped
1/2 red bell pepper, chopped
2 Tbsp butter
1.5 lb bag frozen corn
3 cans creamed corn
2.5 cups cracker crumbs
4 large eggs, beaten
1 can condensed milk (may substitute 1/2 cup soy milk or 1/2 cup blended silken tofu)
1/4 tsp paprika
Melt butter. Sautee onion and pepper, stir in bag of frozen corn and stir until defrosted. In a bowl, add this mixture to eggs, milk, creamed corn, and 1.5 cups of the bread crumbs. Transfer to a baking dish, and sprinkle remaining 1 cup of bread crumbs and paprika. Bake at 350 F for 30 minutes or until 'set'.
This is my dad's recipe. He's no slouch in the kitchen.
