It will depend from countries (eastern Europe is cheaper than central), accommodations, meals / lunch / dinner versus sandwiches, etc.. So no exact figure can be said, it is preferable to make some rough estimates and play with those numbers. And the prices of the hostels will also vary per country my suggestion is to see on the Internet some prices, remember group rooms in hostels are the cheapest.
Interrail ticket price?
Has been changed over time.
Train schedule... how do I know?
There is a book "Thomas Cook European Timetable" that has the time table, the problem is that this book is hard to find. The overall solution I can give you is to have one or two days a safeguard in your trip, for situations when intend to stay longer. Thomas Cook's book can be useful but not essential.
There is train connection between X and Y?
I do not know, do your research ...

What are the best cities and places to go?
Now this varies with the tastes of each person. For beach go south, for mountains and countryside go further north. Large cities in centre of Europe, small towns at east of Europe and so on... Recommend that you do a search through our Internet friend. My favourite places are Portugal and the Netherlands.
Security?
Varies in each country, for what I know theft is more predictable in the south of Europe ... but still not very common.
Book hostels?
Book in advance, normally whenever I came to a city (we had a book with hostels) we would call a few hostels but I think we only once we booked with one day in advance. When we went to a country which had no information of rooms... well... it was an adventure!
