Then it's time for 10 or 12 hours on a 225 degree or so grill. Thermocouple probe required!!
Last, when it reaches that magic 203 degrees, off she comes and it's time to shred!!!
I recommend Meathead's recipe (surely that won't surprise you) but I can say, a 10 lb butt, 19.5 hours @ 225 degrees, off the grill at 203 degrees, magnificent!
