Peanut Butter Granola

1/2 cup creamy peanut butter

1/2 cup pure maple syrup

1/4 cup canola oil

1/2 teaspoon vanilla

1/4 teaspoon salt

3 cups old-fashioned rolled oats

1 cup crisp rice cereal flakes (such as Original Special K) or rice cereal or other crispy cereal...this makes the granola a little less dense and adds some lightness and crunch

1/4 cup raw wheat germ

Preheat oven to 300 degrees. Line a large rimmed baking sheet with parchment paper. In a medium-sized bowl, whisk together the peanut butter, syrup, oil, vanilla, and salt. In a large bowl, toss together the remaining ingredients. Drizzle the peanut butter mixture over the oat mixture and toss gently to coat. Spread evenly on the baking sheet and bake for 20-30 minutes, or until golden, stirring every 10 minutes or so. Toward the end of the baking time, watch carefully for burning. Cool completely before storing in an airtight container.
