Maple Apple Cinnamon Muffins

1 cup all-purpose flour

1 cup whole-wheat flour

1 tablespoon baking powder

1/4 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup sugar

2 tablespoons pure maple syrup

1/4 cup vegetable oil

1 whole egg PLUS one egg white

1/2 cup plain or vanilla lowfat yogurt

1/4 cup milk

2 medium-sized apples, peeled and shredded

Toppping:

2 tablespoons brown sugar

1 tablespoon sugar

Heat oven to 400 degrees. Coat 12-14 muffin cups with cooking spray. Combine dry ingredients (flour-salt). In separate bowl, mix wet ingredients. In small bowl, mix topping. Gently fold dry ingredients into wet. Portion into pans. Distribute topping evenly. Bake 12-16 minutes. Cool in pans 5 minutes before removing and cooling on wire rack.
