- Scarlett Andrews is a Master's Candidate at the Roger Thayer Stone Center for Latin American Studies at Tulane University. She became involved in this initiative through her interest in urban agriculture and sustainable food systems. Her research at the Stone Center focuses on urban Amazonian food systems, and she hopes to continue her research and involvement in Latin America and New Orleans through pursuing a PhD. In her spare time, she enjoys going to farmers' markets, cooking, and eating, and her ultimate dream would be for all New Orleaninans to appreciate the value of fresh and healthy food!
- Kelsey Dean is a Master's Candidate in Public Health at Tulane University School of Public Health and Tropical Medicine. This website sprang from a class project that focused on the local, healthy food sector in New Orleans. Kelsey hopes to continue this research to understand and ultimately fulfill her dream of providing healthy, affordable, and sustainable school lunches for children, and help children develop habits and lifestyle choices that will benefit them for a lifetime.

- Laura Murphy is currently based in the Department of Global Health Systems and Development (formerly International Health & Development) at Tulane University School of Public Health and Tropical Medicine in New Orleans. She also has appointments in the Payson Center for International Development and the Roger Thayer Stone Center for Latin American Studies at Tulane. She teaches a range of courses on the intersection of population, environment, technology, and development. Her research has focused on the livelihoods of the poor, the implications of the African HIV/AIDS epidemic, and the social shaping of technologies, such as mobile phones and kitchen gardens.
