http://www.storyofstuff.com/ has several movies (the story of stuff, the story of cap and trade, and I think coming soon the story of electronics). These videos are fairly short and very easy to follow and nicely lay out some of the issues you may want to consider when thinking about resource use and the politics of managing resource use.
What they are not is referenced academic articles, and they definitely take a specific viewpoint on things. But they bring another type of value to this course: They illustrate one very effective way of taking complex material and bringing it to a wider audience.
