Inside Out Egg Rolls
2 bags cabbage
2 rolls turkey breakfast sausage
2 cups shredded carrots
2 tbsp low sodium soy sauce
black pepper, to taste
Brown the turkey sausage in a large skillet and chop fine. Add carrots, cabbage and soy sauce. Stir fry until cabbage is tender.

Italian Sausage and Peppers
It's not low fat, but it is low carb. You can substitute chicken sausage, which we will be trying soon
1 pkg Johnsonville Italian sausage
3 bellpeppers - stoplight (red, yellow green), hallowed and sliced
1 yellow onion sliced
Preheat the oven to 350 and cook until sausage is cooked through.
Shelly's Ricotta Bake

8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese
Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.

Storebought Pesto Sauce
Bocconcini (small Fresh Mozzarella Balls)
Fresh Basil Leaves
Cherry Tomatoes
Thread items onto bamboo skewers. Repeat until you’ve run out of skewers or ingredients. Drizzle skewers with pesto sauce nuke it for a few seconds to thin it out and sprinkle with Kosher salt and a few twists of black pepper.
