This recipe is based on a meal I had at The Pilot Inn in Eastbourne, after a long walk on a hot summer's day.
Ingredients (for 2, or 4 if it's just a side salad):
Slice of watermelon
100g Feta cheese
Full sprig of fresh mint
Couple of handfuls of 'salad leaves' (mostly spinach, but the bags you can buy have different types of lettuce and rocket and other leaves mixed in)
Handful of cherry tomatoes
Optional extras:
Olive oil, or your favourite salad dressing.
Sprinkling of pine nuts
Handful of olives
Serve with:
Fresh cooked fries
or quinoa
or bread
or whatever you like
Method:
Set cooking anything that needs cooking - chips, quinoa, etc.
Chop up the watermelon and feta into pieces about the size of your first thumb joint, removing the watermelon seeds.
Wash mint and salad leaves. Cut the mint leaves into smallish pieces, and tear the salad leaves if they are bigger than about your thumb.
Chop cherry tomatoes in half.
Mix everything together!
Pour over your chosen salad dressing. The Pilot Inn had some kind of syrupy dressing, which I have not yet figured out.
