Spare Ribs (NOT baby backs), two racks minimum; excess to be shared after judging.
Check-in starts at 8:00 AM. Ribs must be free of marinade, rubs, spices, etc. when checked in.
All ribs shall be cooked at the site of the competition.
Contestant shall provide own ribs, cooker and fuel.
Turn-in time shall be 3:00 PM with judging starting shortly after
Four ribs must be turned in by 3:00 PM
Judging will be on taste, texture, and presentation.
Winners shall be announced once judging is complete.
This is a friendly competition and not a commercial event. Sharing, laughing, and cooking are what makes this event work!
There will be a $20 side bet on the best smoked dish/item after the competition.
The side bet dish must contain 50% of something you have smoked.
If your not competing in the Big Nasty, please bring some food or drinks to share
Donations are accepted to help cover the cost of the event
