Chisciöi
Fritters with buckwheat and cheese, served with a salad of finely chopped Cicora.
Sciatt
Rounded crispy fritters with heart melted cheese, served with a salad of finely chopped Cicora.
Bresaola
A cured meat made from beef, salted and matured, which is eaten raw.
Slinzega
A cured meats made from beef but of much smaller size of bresaola.
It tastes much stronger because flavored with salt, cinnamon, cloves, garlic, bay leaf and pepper.
As follow a single dish, pizzocheri or taroz:
Pizzocheri
The signature dish of the regional cuisine from Valtellina, much appreciated especially in colder months.
These are thick buckwheat noodles cooked along with potatoes, cabbage and seasoned with Casera cheese.
Taroz
Another traditional dish of the simple but tasty cuisine from Valtellina, made from cooked potatoes, green beans, cheese and butter.
Served with a red wine of Valtellina DOC
or a red wine of Valtellina DOCG:
MAROGGIA – SASSELLA – GRUMELLO – INFERNO – VALGELLA
