Lump Crab Wrapped in Phyllo

Ingredients:

1 8" square non-stick baking pan

1 box frozen phyllo dough

1/2 lb. lump crab meat

2 eggs

1 tablespoon flour

1/2 cup mayonnaise

1/2 cup whole milk

4 oz. shredded swiss cheese

4 oz. shredded cheddar cheese

1 teaspoon Old Bay seasoning

1 tablespoon diced sweet pimiento

1 tablespoon diced green chilies

1 tablespoon finely diced onion

1/4 teaspoon salt

Olivio buttery spray, or similar brand for phyllo

Directions:

1. Remove phyllo dough and thaw in refrigerator for 24 - 48 hours.

2. Preheat oven to 350o.

3. Combine eggs, flour, mayonnaise and milk. Mix well.

4. Add remainder of the ingredients, except the crab meat. Mix well.

5. Remove phyllo dough from package and unroll onto a flat surface. You will lay down 12 sheets of phyllo for this dish.

6. Generously spray the top sheet of phyllo with Olivio spray. Using 8' baking pan as a guide, fold long side of phyllo so that it will fit into the pan width-wise. Give the underside of the section you just folder over a light spray of Olivio.

7. Lay down your first sheet of phyllo with the end of the phyllo touching one side of the pan and the rest of the sheet overlapping and draped over the opposite side. Now move to the next sheet of phyllo and repeat this process except this time place the end of the sheet of phyllo on the side of the pan with the overlapping first sheet and let this second sheet overlap on the opposite side. Do this alternating method once more in this direction.

8. Now, repeat this on the opposite two sides of the pan. At this point you will have laid down eight sheets of phyllo; four alternating left to right and four alternating top to bottom. (See images below as a guide.)

9. Lay down two more sheets, alternating, left to right and the final two sheets, alternating top to bottom. You have now laid down twelve sheets of phyllo.

10. Combine the lump crab meat with your egg and mayonnaise and milk mixture and combine thoroughly trying not to break up the lumps of crab meat.

11. Pour this mixture in the phyllo lined pan.

12. Then fold over the phyllo on top of the crab meat mixture. Fold left, right, top, bottom.

13. Sprinkle with a little Old Bay seasoning and slice the top a couple times to allow it to vent.

14. Spray the top liberally with Olivio Buttery Spray. Place into a preheated, 350 degree oven for forty minutes.

Remove from oven and allow to cool for 5 minutes. Serve warm or at room temperature with sour cream.
