Stuffed beef tomatoes
By Mira Lieberman
Bears love stuffed tomatoes, so if you know a nice bear, make it for them, they’re so simple. Some people make them as a starter, and I can see the appeal, they look very impressive but with a lemony salad on the side they make for a wonderful main.
Ingredients
10 beef tomatoes, emptied of innards (but save them for a sauce or something else)
1 tbsp balsamic vinegar
1 tbsp brown sugar
Salt and pepper to taste
6 tbsp olive oil, divided into 2
2 thick slices of bread
1 clove garlic, minced
1 tsp thyme

Method
Place baking sheet on an oven tray, splash with a little bit of olive oil, place the emptied tomatoes, sprinkle with 1 tbsp of brown sugar, 3 tbsp olive oil, half a tsp of salt, some black pepper, balsamic vinegar and thyme and place in the preheated oven for half an hour, at 200 degrees.
Meanwhile, prepare the filling. In a food processor, place the two slices of bread, together with the garlic, olive oil, salt, and pepper and pulse to crumb consistency. Heat up a frying pan, and stir fry the bread mixture until golden.
When the tomatoes have cooled to the touch, stuff them and devour!
