Okra Masala fry

Wash 200 g fresh okra and let it dry completely (critical step) before chopping in small pieces.
Add cooking oil to hot pan and keep on medium flame.
Add cumin seeds once the oil is heated and sauté.
Add chopped spring onion to the hot oil.
Then add dry chopped pieces of okra to the hot oil pan, turn flame on high.
Add garam masala, hot red chilli powder, onion powder, and a spoonful of peanut/almond/cashew/pistachio powder and mix well. Let it cook for 5 mins on high flame then for 5 more mins on medium flame.
Add salt to adjust the taste.
Turn off the flame and transfer the crispy “Okra masala fry” to serving bowl.
Best served with dahl and rice.
