Home made pumpkin puree

Ingredients

  • 1 medium pumpkin

  • 1/4 tsp salt

  • Sunflower oil

  • 1 tbsp treacle

  • 1 tbsp maple syrup

How to prepare

  1. Preheat oven to 230C.

  2. Cut the pumpkin into 8 pieces and place on a baking tray. Brush the pumpkin with the oil, and sprinkle with salt.

  3. Roast for about 40 minutes or until the pumpkin is soft. Allow to cool enough to handle.

  4. Remove the skins (they come off very easily) and scoop the pumpkin flesh into a food processor. Add the treacle and maple syrup and puree. Proceed to make muffins, cakes, and pumpkin buns!
