Green toast sandwich

The filling described in this recipe could also be used for making other recipes such as samosa or aloo parantha as well.

Method

  1. For the green filling: Add ground spinach, mint, ginger and garlic paste to mashed potato, add pinch of dried mango powder and finely chopped pieces of green chilli.

  2. Apply vegan butter to the bread slices and stuff two slices with the green potato filling and some crispy fried onions.

  3. Toast it on a pan until golden brown on both sides with oil of your choice.

  4. Cut in four pieces and serve the crispy ‘green toast sandwich’ with tomato ketch-up (or maybe with vegan cheese spread).
