Chia seed parfait

Ingredients
Chia pudding:
Chia seeds and plant milk (1:3 or 1:4 ratio, depending on how thick you want the pudding to be) - it keeps for a few days, so you can make a decent amount at once (eg. ½ cup chia seeds : 1 ½ - 2 cups milk)
Sweetener of choice
Optional: other flavouring (eg. 1tsp matcha powder, cocoa powder*)
Other ingredients:
Plant yoghurt
Toppings of choice (eg. granola, in season fruit, chocolate shavings*)
*ensure these are ethically sourced
Method
Chia pudding (make the night before):
In a bowl, or leak proof container, add the chia seeds,plant milk, and any additional sweetener or flavouring and stir
Leave in the fridge for 10-30 minutes
Take out and stir (if you’re using a leakproof container, you can just shake it), and leave it in the fridge overnight to thicken. This ensures that the seeds are equally distributed within the milk
Assembly:
Layer the yoghurt and chia pudding in a clear container (a glass works well), then top with your desired topping
