Bright and cheerful Borscht

Ingredients
3 medium organic beets, peeled and grated
1 organic red onion, finely chopped
2 organic celery sticks, chopped
3 medium potatoes, peeled and cut into medium chunks
2 carrots, peeled and thinly sliced
4 tbsp organic ketchup or organic tomato puree
2 tbsp white vinegar
1 tsp white sugar
8-10 cups of veggie broth
3 tbsp chopped organic dill
2 organic garlic cloves, peeled
2 bay leaves
Salt, pepper
Method
Heat 1 tbsp of organic olive oil in a large pan until golden. Add potatoes, grated beets, chopped celery, and sliced carrot and sauté for 10 minutes.
Add the veggie broth and garlic and cook, covered for 10-15 minutes until the potatoes are tender and soft, but not breaking apart.
Add vinegar, salt to taste, black pepper, dill, tomato puree or ketchup and simmer for 2-3 minutes. Taste and adjust seasoning. Serve with chunky crusty organic white bread.
