Bright and cheerful Borscht

Ingredients

  • 3 medium organic beets, peeled and grated

  • 1 organic red onion, finely chopped

  • 2 organic celery sticks, chopped

  • 3 medium potatoes, peeled and cut into medium chunks

  • 2 carrots, peeled and thinly sliced

  • 4 tbsp organic ketchup or organic tomato puree

  • 2 tbsp white vinegar

  • 1 tsp white sugar

  • 8-10 cups of veggie broth

  • 3 tbsp chopped organic dill

  • 2 organic garlic cloves, peeled

  • 2 bay leaves

  • Salt, pepper

Method

  1. Heat 1 tbsp of organic olive oil in a large pan until golden. Add potatoes, grated beets, chopped celery, and sliced carrot and sauté for 10 minutes.

  2. Add the veggie broth and garlic and cook, covered for 10-15 minutes until the potatoes are tender and soft, but not breaking apart.

  3. Add vinegar, salt to taste, black pepper, dill, tomato puree or ketchup and simmer for 2-3 minutes. Taste and adjust seasoning. Serve with chunky crusty organic white bread.
