If you plan to record the classroom session, it is best to notify your students in advance. Allow students the option of muting or turning off their video during recorded sessions. Check with your institution's legal counsel for any specific regulations surrounding recording Zoom class sessions and sharing with students.
There are a few features that can help to mitigate privacy concerns:
In the Recording settings of the Zoom web client, you will find a setting that allows you to enable a customizable disclaimer students must consent to before joining the meeting. You may also prompt yourself and your participants with a message before starting a meeting recording.

Zoom's "Spotlight" feature allows you to record only the presenter. You can also use this to select up to 9 individuals to spotlight.
To enable Spotlight Video:
At the top of your screen, hover over the video of the participant you want to spotlight and click ...
From the menu, choose Spotlight for Everyone.
(Optional) To spotlight additional participants (up to 9 total), follow steps 1 and 2 again as needed, clicking on Add Spotlight instead.
To Cancel a Spotlight:
Click Remove Spotlight in the upper-left corner of the video area.
