In this course you will learn the principles of food-borne illness etiology and transmission as well as those food-borne agents resulting in food spoilage, infections and poisonings. You will also learn sanitary, preventive and managerial practices mandated by public health laws for food service personnel and health inspectors to ensure food safety.
Advisories: ESL 184 or ENGL 88 or placement in ESL 186 or readiness for college-level English
This course is required to complete a degree in the Culinary Arts. But more importantly, you NEED to know how to keep food safe. It's critical to your upcoming career and any restaurant or catering business you intend to build and grow.
Please note: This course is required for students in CCSF's Culinary Arts Program. A degree in the Culinary Arts from CCSF requires that students BOTH pass this course AND pass an accredited version of the Food Safety Manager Exam.

There is no textbook required for this class. All information you need is contained in the lessons within Canvas.
While it's not required, some students find the ServSafe Manager Book 7th Ed to be useful.

This is an 8-week online course with no mandatory course meetings. A midterm and final exam are required and will be offered online.
