I'm Dr. Sheri Miraglia and I will be your online instructor for Principles of Food Safety. If you've made it to this page, you are very likely a new student in the Culinary Arts Program at CCSF. Welcome!
Learning how to prepare and serve safe food is critical to anyone working in the foodservice industry and particularly important for those of you who are planning to earn degrees in the Culinary Arts. You will be owning/managing restaurants and training your employees to prepare and serve safe food. That's why we encourage you to enroll in this class before you enter the Culinary Program OR within the first semester.

Once the class has begun, go to the myCCSF Student Portal and select "Student Add Request". Follow the prompts to notify me that you wish to add the course. I will do my best to add anyone who wishes to take the class. If necessary, priority will be given to students in the Culinary Arts Program at CCSF.

I became a community college microbiology teacher because I love the elegant relationships between molecules, cells, and living organisms. I love thinking about science, reading about science, watching science videos, and generally being immersed in it. Teaching microbiology provides me with the opportunity to share with you, my experience of microbiology. Nothing is more exciting to me than sitting with you at your microscope exploring a gorgeous specimen together, discussing how pandemic disease has shaped human history or discussing the public health implications of disproportionate access to preventative healthcare. I believe strongly that scientific literacy is a great equalizer and that the world will be a safer and more equitable place if everyone used facts and evidence as a framework for determining what is ethical, what is real, and how best to approach the challenges of our time, such as pandemic disease and climate change. I hope that in this class you will find your own joy in scientific discovery and leave equipped with new tools to process the vast amount of information that we are all exposed to every day.
