Vastlakukkel are traditionally baked only a few weeks before Shrove Tuesday (Pancake Day).
Vastlakukkel is a cardamom spiced wheat bun, filled with whipped cream, jam or marzipan.
Ingredients
2 eggs
- a pinch of salt and brown sugar
- a cup of sour cream
- half a cup of flour
- half a tsp of baking powder
- grated courgettes (or grated apple or a mashed banana)
Recipe
Mix all the ingredients using a whisk Then fry on a low heat in sunflower oil for a couple of minutes on each side, making round pancakes. Serve warm with sour cream and a choice of jam or honey on the side to dip in.
