Come join us in exploring the incredibly diverse regional flavors and cooking styles of this cuisine, from the strong and spicy flavors of Sichuan, to the delicate flavor balances of South China, to the hearty and filling plates of the Northern Provinces. Visit Chinese restaurants in both Honolulu and Kailua, follow the long and complicated story of Chinese food and immigration in both Hawaii and America, and discover how that history can still be found in the flavors and dishes that are both so familiar and unfamiliar to us today. At the end of the week, we will co-create a website detailing our culinary exploration to serve the Oʻahu community, so more people know where to find the delicious and unique Chinese dishes they are looking for. We have a lot to learn--and eat!-- in this course, so make your reservation today!"
