250g self-raising flour
1 pinch salt
60g butter
125g cheddar cheese (grated)
1/2 tsp mustard powder
1 egg
150ml milk
Put the flour into a bowl and add 1 pinch of salt. Cut the butter into cubes and rub into the flour until it looks like breadcrumbs.
Add the grated cheese and mustard powder, then mix again using your hands.
In a measuring jug, crack the egg and pour in the milk. Whisk together.
Make a well in the middle of the dry ingredients and slowly add the milk and egg mixture, combining the ingredients between each addition.
Bring the dough together so it is nice and soft but not too sticky (you might not need to add all of the milk and egg mixture)
Sprinkle some flour onto the work surface and place your dough on top. Roll out the dough with a rolling pin until it's about 2cm think.
Use a cutter or glass to cut out the scones and place on a lined baking tray.
Brush on a little milk and sprinkle with a little more grated cheese and bake in the oven on 190C (fan) for 10-15 minutes. Best served warm!
