250g self-raising flour
1 pinch of salt
60g butter
125g Cheddar cheese (grated)
1/2 tsp mustard powder
150ml milk
1 egg
Put the flour, salt and butter into a large mixing bowl. Rub together until it is well mixed and looks like fine breadcrumbs.
Add the grated cheese (reserve a little for decoration) and mustard powder and mix thoroughly.
Measure the milk into a jug, add the egg and whisk slightly.
Gradually add the milk and egg mixture to the breadcrumb mixture until a firm dough is formed (not too sticky). You may not need all of the milk and egg mixture.
Lightly flour the work surface and roll out the dough until it is about 2cm thick. Then use cookie cutters to cut out your scones and place them on a baking tray.
Brush with a little milk and sprinkle with reserved grated cheese and bake in an oven for 10-15 mins at 200C/190C fan.
