Recipe of the Month (Dec.): Grinch Cookies

Grinch Cookies

Ingredients:

  • 1 box Vanilla Cake Mix
  • 1 stick Unsalted Butter, softened
  • 1 Tablespoon Canola Oil
  • 2 Eggs, room temperature
  • 1 cup Powdered Sugar
  • 1 cup Corn Starch
  • Green Gel Food Coloring
  • Parchment Paper
  • Candy Hearts

Glue for hearts:

- Confectioners Sugar

- Milk

- Piping Bag or Sandwich-Size Baggie

Directions:

  1. Preheat oven to 375°F. Cover baking sheet with parchment paper.
  2. Add dry cake mix, butter, eggs and oil to a medium-sized bowl. Stir until ingredients are combined.
  3. Add green food coloring. Refrigerate dough for 15 minutes for easier handling.
  4. In a separate bowl, combine the powdered sugar and cornstarch.
  5. Roll dough into 1 inch balls, then coat with the powdered sugar mixture. Place cookie balls on the parchment paper-lined baking sheet.
  6. Bake for 8-10 minutes, or until cookies are slightly brown on bottom.
  7. Once done, remove the baking sheet from the oven and leave the cookies on the sheet for 2 minutes, then transfer to wire rack.

(Hearts):

  1. In a small bowl, blend the “glue” ingredients.
  2. Add them to a sandwich baggie. Cut a small corner of the bag, then proceed to pipe a tiny amount of glue onto the tops of each cookie. Add hearts and set for a couple of minutes until dry.
