Bistro Manly’s contemporary, laidback elegance and refreshing coastal feel is a welcomed addition to Manly’s food and wine scene. With an all-day dining menu featuring a selection of French bistro classics, premium fresh seafood, cocktails, and a bar menu perfect for aperitif o’çlock.
The bright and breezy dining room resembles a European style brasserie with elegant marble accents, artwork filled walls and pops of pink hues in the cosy booth seating, making for the perfect dinner date or long lunch setting.
Working in partnership with Sheraton Fiji Resort, the resorts premier restaurant was designed and operated under the stand-alone brand ‘Flying Fish Fiji by Peter Kuruvita.
The iconic seaside restaurant featured Peter’s menu & signature dishes and became the premier dining destination in Fiji for the 10 years of its operation from 2008 to 2018.
Peter implemented his operational systems and procedures, created the menus and recipes, and marketed the restaurant under his own brand. Quarterly on-site visits ensured menu changes, staff training and troubleshooting maintained his brand standards. Special on-site ‘Peter Kuruvita’ events attracted local regulars and extra ticketed revenue.

Kuruvita established the food and beverage operations for the opening of the resort in 2014, working within the strategic difficulties of a remote location.
The resort’s five food outlets included the premier restaurant ‘Flying Fish Tokoriki by Peter Kuruvita’, featuring his signature dishes and menus. He placed and trained key staff, as well as creating the menus and systems across the resort to assist the future success of the business.
