There are many ways to address assessing learning, and many of them already involve technology. Below are some ways you can have students demonstrate their learning online. Remember that if students are experiencing online school, they will already be in front of their screens for hours. If you can use options that take them away from devices, it's probably worth doing so.
Where students have completed offline assessments, there are a range of ways they could submit their work whether it's on paper, a construction project or evidence of an activity.
Before schools closed, our classes were comfortable with creating sketchnotes for both formative and summative assessments. As they require nothing more than a writing tool and blank paper, I'll continue to use these.
One way students can digitise their sketchnotes (or anything else on paper) is CamScanner - this is a free app for Apple and Android phones and tablets. Use the device camera to take a picture, and then resize, rotate and enhance it before submission. Produces much better images than a camera alone. I've used it even for official applications such as passports and driving licences.
As you can't be physically there to examine students' handiwork, you can ask them to use their devices to record a commentary. They can create a video that guides the viewer around their creation and possibly give some insights and reflections on the process. The video here shows the whole process of building a model, but you can ask students to just record the final piece and talk you through their design options (or whatever criteria you set).
These can be used to create brief exit tickets or check-ins at any point in a lesson. Remember that you can embed images, screencasts and other videos directly into the form. This means students can see, and respond to, whatever media you choose including your familiar face and voice.
Pear Deck allows you to insert assessment directly into Google Slides. At any point in the lesson you can offer students one of a range of prompts. They respond from their devices and you can instantly see comprehension, questions and/or who's with you and who's not. Watch the video for a quick intro and find many tutorials on Youtube.
