"At present, most of Hong Kong’s food waste is disposed of at landfills together with other municipal solid waste. In 2019, there were some 11,057 tonnes of MSW disposed of at landfills each day. Of these, about 3,353 tonnes (30%) were food waste, constituting the largest MSW category being landfilled." HK Environmental Protection Department, 2021.
Food waste can lead to pollution, loss of biodiversity and even contribute towards climate change. The government and charity organizations have been combating the issue through waste recycling facilities, waste reduction advocacy projects and food donation programs.
We hope to introduce a new approach to tackle this issue: waste reuse. While it is inevitable that food waste will be generated, they don't necessarily need to be thrown into the bin. Instead, they can be turned into yet another mouth-watering dish!
