FOODS & NUTRITION I: Semester, 1 credit Grades 10-12 students
Description: Focuses on food preparation techniques. Course units include: food & kitchen safety, knife skills, nutrition, eggs, dairy, grains, quick & yeast breads, baking and cooking skills. Students will participate in hands-on foods labs an approximately two times a week. Graded upon tests & lab work.
FOODS & NUTRITION II: Semester, 1 credit
Pre-Requisites: Foods & Nutrition I
Description: This class moves rapidly. It is expected to have enter the class with a strong skill set from Foods I. The course focuses on food preparation techniques. Course units may include: kitchen & safety basics, knife skills, cooking methods, equipment, nutrition basics, proteins, soups & sauces, fruits & vegetables, and starches. Students will participate in hands-on foods lab an average of two times a week. Graded upon tests & lab work.
CULINARY ARTS: Semester, 1 credit
Pre-Requisites: Foods and Nutrition II
Description: This class moves rapidly. It is expected to enter the class with a strong skill set from Foods II. This is an advanced level course where the focus is on food 'presentation' and 'preparation'. Units may include garnishing, icing techniques, baking techniques, decorative plating of foods, appetizers, multicultural foods, salads, sandwiches etc. Students will participate in many hands-on labs or experiences. Graded upon written tests and labs.
HEALTHCARE CAREERS: Semester, 1 credit Grades 11-12
Description: This course focuses on occupations within the health care field, ranging from doctors, nurses, dentists to lab technicians, pharmacists, athletic trainers and more. This course covers all of the body systems (integumentary, lymphatic, digestive etc.). This course will help identify areas of interest and ability within the medical field. Lab activities are conducted by healthcare professionals. There is an emphasis on medical terminology. Graded upon tests, quizzes, in class activities and projects.
HOUSING & INTERIOR DESIGN: Semester, 1 credit Grades 9-12
Description: Course units may include elements & principals of design as found in the interior design and housing industry, architectural styles, drafting floor plans, interior design, interior decorating, 3-D perspective drawings, furnishings & accessories, traffic patterns, and basics of landscaping. Graded upon tests and projects.
INTRODUCTION TO EDUCATION: Semester, 1 credit Grade 10-12
Description: This course focuses on the career field of education. Coursework will cover careers, trends, history, being an effective teacher, instructional strategies, the learner, instructional strategies and more! Students will develop lesson plans and have an opportunity to observe in the elementary and middle school level. Graded upon tests, projects, assignments.

CHILD DEVELOPMENT: Semester, 1 credit Grades 9-12
Description: Units include pre-natal & neo-natal development, infant care, care of the child, physical/emotional/social/intellectual development of children. Units explore an introduction to education including theories of child psychology, lesson plans and teaching skills. Students will participate in hands-on lab experiences, working directly with children and implementing the lessons they develop. Graded upon tests, projects and lab experiences and assignments.
HUMAN DEVELOPMENT & RELATIONSHIPS: Semester, 1 credit Grades 10-12
Description: This course covers the entire human lifespan focusing on physical, emotional, social & intellectual development. Units include healthy relationships within dating and marriage, parenting decisions, parenting styles, crisis, grief, middle age, old age, death and more. Graded upon tests, assignments and projects.
TEXTILES, CLOTHING & DESIGN: Semester, 1 credit Grades 9-12
Description: This course covers textiles and fabrics, machine sewing, hand-stitching, reading a pattern and more. Toward the end of the semester independent project work is implemented. Grading is based on quality of projects, assignments, time management and tests.
