In the Intermediate Food Studies course, students will develop technical skills in bread making, cake and pastry baking, and the preparation of global dishes. This hands-on course provides the opportunity to explore the diverse world of food while deepening their understanding of food and nutrition. Students will also explore the benefits of vegetarian eating, preparing a variety of plant-based dishes and learning about the nutritional advantages of this diet. Working in a fast-paced, supportive environment, students will refine their culinary techniques, enhance their knowledge of nutrition, and gain a broader appreciation for different culinary traditions.
The Advanced Food Studies course builds on the skills acquired in Foods 10 and 20, allowing students to refine their culinary expertise. Students will dive deeper into the art of creating advanced foundational soups and sauces, exploring ways to adapt them for new food trends and lighter, healthier eating. They will also expand their knowledge of yeast breads, mastering classics like bagels, challah, and brioche buns, while perfecting their shaping techniques. Through various projects, students will showcase their ability to scale recipes, plan, and execute multi-day tasks with precision. A standout project is the cake creation, where students can push their boundaries, take risks, and craft stunning showstopper cakes. In addition to advanced cooking techniques, students will further their understanding of nutrition and digestion, learning how to adapt dishes for specific dietary needs and restrictions.
