Dr En-Pei Isabel Chiang received her PhD in Biochemical & Molecular Nutrition from Tufts University in 2000 (mentor: Jacob Selhub), and post-doctoral training at UC Berkeley in biochemistry and metabolism (mentor: Barry Shane) in 2003. Chiang initiated her career in 2003 as a tenure-track Assistant Professor, rose through the ranks to Associate Professor in 2007, and Professor in 2011. Currently Chiang is a life-time distinguished professor at National Chung Hsing University, Taiwan. Chiang works in the areas of folate mediated one carbon metabolic kinetics, nutrient-genome interactions, as well as fundamental aspects of nutrient metabolism and regulation. The current focus of her research also involves the mechanisms by which inflammatory mediators and anti-inflammatory therapies alter vitamin B6 synthesis and utilization. Her research program has been well funded through competitive extramural research grants since the establishment of her independent research career in 2003 and has published her research works in major nutrition, biochemistry, and medical journals. Up to now her publications have been cited over 2000 times (on average each cited >30); and has given/chaired >50 presentations at the FASEB, Asian Nutrition Congress, International Union of Nutritional Sciences, International Conference on Food Factors, International Symposium on Biocatalysis and Agricultural Biotechnology, and other major international conferences. She has received honors from American Society of Nutrition (E.L.R. Stokstad Award), American Association of Cancer Research (Scholar in Training Award); Arthritis Foundation (Doctoral Dissertation Award), Academia Sinica of Taiwan (Shang-Fa Yang Young Scholar Award), Ministry of Science & Technology of Taiwan (Future Technology Award; Outstanding Young Scholar Grant), Taiwan Food Science & Technology Society (Outstanding Young Scholar); Taiwan Nutrition Society (Prof Chen Award for Young Scholar; Outstanding Researcher) and many others.

蔣教授長期在營養代謝研究領域耕耘,其研究團隊多年來建立多項體內體外研究模式並開發許多獨特的代謝路徑追蹤平台, 其研究團隊交叉運用細胞、微生物、轉殖基因動物模式、及人體臨床試驗結果, 結合代謝留追蹤平台系統, 探討人類疾病預防、臨床用藥風險、對人體代謝調控之重要問題。研究成果多在營養生化、基礎醫學、農業食品科技領域之高質量期刊發表, 平均每篇著作引用>30。每年被引用總數>100。此外有7項專利通過, 2項合作計劃衍生技轉, 研究兼具學術創新性與產業應用性。近年多次受邀國際會議演講擔任 Session Chair/Moderator 超過20場, 包含: 世界葉酸及同半胱氨酸代謝領域最重要會議;實驗生物聯合會議 FASEB; 世界營養大會IUNS; 亞洲營養大會ACN;大型國際食品會議Icoff 及 ISNFF, 國際生物催化與農業生物技術會議 ISBAB;日本油脂學會ACOS;國際輔因子酵素聯合會議;亞洲微生物論壇; 亞太營養基因體學國際研討會;表觀基因組學國際研討會等, 並多次擔任國際會議 Session Chair/Moderator。曾連續受美國營養學會邀請,代表台灣主持 Taiwan Forum並進行專題演講,大幅增進興大食生系之國際能見度。目前亦擔任行政院『食品安全會報』委員、衛服部食品衛生安全與營養諮議會委員、以及國人膳食建議攝取量葉酸組制定委員。近年研究成果獲得榮譽包括: 2019【科技部未來科技突破獎】、2020【國家新創獎】2021 【國家新創續獎】及2022【國家新創獎精進獎】、並被推薦收錄於『2023國家新創獎精進標竿技術年鑑』。過去曾榮獲2015中研院【楊祥發年輕農業學者獎】;2014【美國營養學會年輕學者研究獎】【國科會優秀年輕學者研究計畫】過去榮譽、2011【臺灣營養學會營養研究傑出學術獎】、2010【台灣食品科技學會蔣徐蓮貞女士食品科技榮譽獎】、2007【臺灣營養學會陳尚球教授紀念學術獎】、當選【中華民國第20屆十大傑出女青年】、【國際生物催化生物科技研討會論文獎】【美國關節炎學會博士論文著作獎】【美國癌症研究學會AACR訓練中學者獎】等。
