Our Final Project: Creating a Stable Salad Dressing

Now that we have learned about what happens when molecules attract and dissolve, we put our knowledge together to make a tasty and stable salad dressing. Some students requested the recipe, so here it is:

(This is a rough guide only, feel free to play around with the amounts)
1/2 cup oil
1/4 cup vinegar
1 spoonful sugar
1/2 spoonful citric acid
1 spoonful lecithin (to act as the emulsifier)

Try making this at home and explaining WHY the solids dissolve and the liquids mix.
