Culinary Arts III (12th grade)

CULINARY CAPSTONE CLASS

Seniors will be participating in a class that will showcase the skills that they have learned in previous classes.

Students in small groups will create a virtual restaurant from the ground up. They will choose a restaurant concept, and work on every business aspect that we can to give them the real world experience of what it takes to open and run a restaurant.

The cumulative project will be a restaurant website that showcases the steps they would take to open their own restaurant.

Students will include in their restaurant site:


  • market research for choosing locations

  • create a menu that considers nutrition and creativity. recipes will be included

  • plate presentation

  • calculate food cost for each menu item.

  • decide what to charge for their menu items using industry methods

  • identify what licenses and other regulatory approvals that are needed

  • Make prep lists and par lists for all of the ingredients required to make their menu

  • and more

Under regular circumstances, student would host a one day "pop-up restaurant" at school during lunchtime, and our faculty comes in to our dining room and orders lunch from the student created menu, just like a real restaurant. Students work as restaurant employees, with a host/hostess, servers, bussers, and kitchen personnel.

If conditions permit, the students will prepare all of the items they will serve at their restaurant, and take pictures to show what the finished dish looks like.
