Seniors will be participating in a class that will be the opportunity to fine tune the skills that they have learned in previous classes. Students still practice their knife skills, and prepare recipes in the kitchen often.
Students also use a computer simulated restaurant business to help learn about each significant aspect of how a restaurant runs, and then use those skills to turn around a struggling restaurant, or create a restaurant empire. The business aspects of Foodservice and Hospitality are examined in detail in this class.
Students practice to be able to host a "pop-up restaurant"at school during lunchtime. Faculty members dine at lunch where students work as restaurant employees, with hosts, servers, bussers, and kitchen personnel. This is a real challenge that is only possible if the students work together as a team and are able to focus on practice and planning to ensure success.
