Carbon Costing - Not all Food Waste is Created Equal!

Our Community Partner, and Judge, Cherwell Collective runs a Climatarian Kitchen.  As a food surplus café, the menu is also carbon costed! Quite literally 'eating to save the planet'.

Over 24 - 31 January, you can get involved in carbon costing your own food following the simple instructions in the links below.

Our competition judging categories include the popularity of submissions when they are uploaded on our Instagram page (by the number of reactions they receive).   We will also feature ANY ENTRIES that include carbon costing following the method given below, on this page and highlight it on Instagram. This will boost your entry and possible reactions - helping you to win, while the planet also wins!   

PLUS, ANY entry that includes carbon costing will automatically be highlighted in the short-listed entries for special consideration by our judges. It does not matter what the results of your calculation are high (don't worry if it is high for example), we just want to appreciate your awareness that food waste carries a cost....  


Category 2 Rescused and repurposed food: "Berees" a rice with raisins is a Mongolian traditional dessert for Lunar New Year (Genden Ganchimeg, Oxford Brookes University)

"I think my recipe can show audiences that leftover rice and banana turned brown which mostly goes to trash bin can be easily turned to a healthy and balanced breakfast or snack by the way of rescuing and repurposing. Idea of adding banana as a sweetener came to me from Thai Mango Sticky Rice that its recipe proves rice and sweet fruits are a good combination. Moreover, my recipe would be a good inspiration and example that we can learn each other's cuisines to create new recipes and/or fusion food for reducing food waste". 



Ingredients:

1. Steamed rice

2. Raisins

3. Ghee

4. Almond

5. Banana ( repurposed as a natural sweetener. Typically, Mongolians put a sugar) 

First, add raisins, almonds, and ghee to the bowl of steamed rice and mix them. Secondly, mixture should be microwaved for 2 minutes. Then, add banana as a sweetener. Finally, put a few pinches of smashed almond for dressing and presentation.
