The name hints at eggs being the main aspect of the dish, but the sour-sweet tamarind sauce seems a strong co-star, while the slightly chewy-crispy texture of the fried egg white & the rich duck yolks provided the tactile delights. Rather than the usual fried shallots, the smokey chilli completed the experience instead.
Why the name? The common urban myth talks about a [possibly or actually] misbehaving son-in-law, and a warning of what [eggs symbolising the male testicles] would be fried by the mother-in-law if he doesn’t treat his wife well. Interestingly, there is a Buddhist story whereby tamarind seeds are symbols of forbearance & faithfulness.

Tamarind actually originates from Africa, but India is the largest producer globally. Its name is supposed to be derived from “tamar hindi” which translates from Arabit to “Indian date”.
