We started serving Jumbo Blueberry Muffins this year in The Bear Bean, and they have been a huge hit! As everything else in TBB, our muffins are 100% made, baked, and packaged by our students, and it has been a lot of fun! Here's how we do it!
First, we divide up into 3 groups. One group putting wet ingredients together, one group putting dry ingredients together, and one invidiual student baking muffins from frozen.
Students read through a recipe, get ingredients and utensils they need, and then their group gets started baking!
Our wet ingredients group puts together eggs, sour cream, sugar, vanilla, butter, and milk.
Our dry ingredients group puts together flour, salt, baking powder, and baking soda.
Each group makes two batches of their ingredients in two separate bowls (because we are doubling the recipe!).
Next, each group takes one wet bowl and one dry bowl and combine them.
Once combined, they fold in the blueberries!
The last thing we do is freeze the dough in "pucks". We spray a silicone muffin tin, and students make 8 jumbo muffins from each batch of batter, and add a lot of Turbinado Sugar on top of each one....then the muffins go into the freezer until frozen solid.
While these groups are doing all of this, our person tasked with baking for the day must read the orders for the week to determine how many muffins we need, then get out the jumbo muffin tins, put the correct number of muffin liners in, and then drop one frozen muffin "puck" from the freezer into each liner. (We bake from frozen!!) Then, the baker puts the muffins in the oven, sets a timer, lowers the temerature, sets the timer again, and then takes out all of the delicious smelling muffins!
Once the muffins cool completely, our Wednesday afternoon team packages the muffins into bags with twist ties to make them nice and pretty and ready to be delivered Thursday morning during The Bear Bean!
The muffins are truly delicious!

We are currently testing a Chocolate Chip Muffin recipe...once it passes our taste test we will most likely add it to our menu!!
