Hello and welcome to Week 3 of Remote Learning! This week we are moving from macronutrients to micronutrients. We will begin with vitamins this week and cover minerals next week. Vitamins and minerals are both essential nutrients but vary greatly from the macronutrients. As a reminder, please don't hesitate to reach out with questions/concerns. I am available during the office hours posted at my website and frequently check email throughout the day. Here is what you need complete for week 3.


  • To Supplement or Not? **Discussion question reply must be made by Thursday at 11:59 pm. This will serve as your attendance check for the week. After you've made your initial post read your classmates and provide at least one peer response.

Week 2

This week you will finish the unit on Macronutrients by taking a test. If you were successful in completing last week's review you should be well prepared for the test. Before moving on to micronutrients (vitamins and minerals) we are going to briefly discuss another essential nutrient - water. The new material this week will look at water and the body's fluid requirements. In addition, this week you will need to cook and prepare a meal for your family. I am suggesting we start with Breakfast this week (if this doesn't work, just let me know) and have provided you several recipes to try or you can prepare something we've all ready made in class (cinnamon rolls or egg strata).

Please complete and turn in the following assignments by Sunday, April 12 at 11:59 pm:

  • What are Your Water Habits Question/Discussion post. **Please respond to this question by Thursday at 11:59 pm so I can accurately report attendance on Friday. In addition to just posting your own response try to reply and post to at least one classmate's response.

Week 1

This week's coursework will focus on reviewing macronutrients (protein, fat, and carbohydrates) in preparation for a Macronutrient Unit test next week. Since we were unable to complete the macronutrient test before departing for the extended spring break, your goal is to re-familiarize yourself with the macronutrients so you can successfully take a unit test next week. Since this is a review week you will not be completing a weekly quiz.

For this week please complete the following:

  • Review classroom lecture slides on Macronutrients in Google Classroom

  • Complete and turn in the Macronutrient Review

  • Participate in the "What have you been cooking" discussion by providing a description of something you've cooked over the last two weeks.


WELCOME!

Hi Culinary Nutrition and welcome to Week 1 of remote learning. It feels like ages ago you were in class preparing homemade pasta sauce with meatballs and mini cheesecakes. Over the last two weeks my daughter and I have made homemade pancakes, waffles, muffins, brownies, cookies, pizza dough, and bread. To borrow a term from the New York Times we've done a lot of "distract-i-baking".

Before getting started, please be sure to read the website HomePage to get an overview of remote learning, review office hours, grading, and attendance. Your weekly course content will be provided through Google Classroom. As we get started, please don't hesitate to reach out if you have questions. I will be responding to emails regularly but would also be happy to set up a Google Meets as needed.
