Chemotaxonomic and evolutionary role of plant phenolics.
Effect of temperature and/or gaseous stress and technological pretreatments (abiotic stress) on phenolic metabolism and related enzymes during ripening and postharvest cold storage of fruit and vegetables. Chemical and enzymatic mechanisms of browning reactions.
Role of phenolics in resistance mechanisms of plant tissues against postharvest fungal pathogens and insects (biotic stress).
Metabolic changes during ripening and senescence of fruit and vegetables. Biochemical markers of quality and storability of fresh fruit and vegetables and their relationships with storage technologies.
Carbon fluxes between primary and secondary metabolism in cell and tissue cultures under nutritional stress.
Member of the Board Committee of Groupe Polyphenols (1998-2002; 2004-2008; 2010-2016).
