Barley or brewer's spent grains (BSG) are nutrient-rich by-products from beer and beverage production, with about 12 million tons generated globally each year. Despite being packed with dietary fiber, plant-based protein, antioxidants, and essential minerals, much of this valuable resource remains underused. BSG’s low glycemic index (GI) makes it an ideal ingredient for blood sugar management and heart health support, adding substantial nutritional benefits to food products. However, BSG decomposes rapidly after brewing, typically needing to be processed within hours, which presents a challenge for preserving its value.

Okara, a nutrient-dense by-product of soy milk and tofu production, is packed with dietary fiber, plant-based protein, and bioactive compounds that can enhance food applications. However, okara is highly perishable and begins to decompose rapidly, typically needing to be processed within hours to preserve its nutritional quality and avoid spoilage.

Orange Peels
Orange peels are nutrient-dense, packed with essential vitamins, minerals, and beneficial plant compounds. They are rich in dietary fiber, vitamin C, provitamin A, folate, riboflavin, thiamine, vitamin B6, calcium, and polyphenols — powerful antioxidants. In fact, just one tablespoon (6g) of orange peel delivers 14% of the Daily Value (DV) of vitamin C, nearly three times the amount found in the orange fruit itself, and contains four times more fiber.
