In this unit, ākonga will become food innovators, exploring how food connects people, culture, and technology. They will work in teams to see how food truck systems turn ingredients into finished dishes, focusing on how preparation, cooking, and service come together for smooth operations.
Through hands-on cooking, ākonga create and refine their own food truck concept and dish. They use feedback from others to make decisions, improve their ideas, and explain how these changes shaped their final product.
Alongside cooking, ākonga learn about the social and cultural value of food. They discover how cuisines reflect history, identity, and tradition, and how recipes are passed down and adapted across generations and cultures.
When choosing a cuisine to research and cook, kaiako can decide whether the class:
Cooks the same traditional dish
Picks from a few selected dishes
Researches and cooks any cultural dish of interest.
By the end of this unit, ākonga will have deepened their understanding of transforming inputs into outputs, managing systems, collecting and acting on feedback, and mastering new recipes.
Note: Kaiako may also choose to adapt or omit the technological systems component (inputs, processes, and outputs) if they wish to focus primarily on social sciences and food and nutrition learning outcomes. This flexibility allows the unit to be tailored to curriculum priorities and ākonga needs.

Practical Activity 4 :Pros and Cons Chart
In this activity, ākonga consider the practicalities, as well as the pros and cons of a food truck.
Start with a class discussion about the food truck in the video. Ask ākonga:
“What equipment is essential for running a food truck efficiently?”
“How do chefs organise space and processes in a small area?”
Then, divide ākonga into small groups. Each group will work together to create their own pros and cons list for operating a food truck.
Encourage them to think about practical aspects like workflow, equipment, space, and customer experience.

After watching a short taco truck clip, they will discuss what goes into making a taco from start to finish and sort ideas under the three system stages. Ākonga will work in small groups to plan their own tacos by selecting their inputs; ingredients, cooking equipment and types of energy.

In this activity, ākonga research and present on different stories connected to food trucks.
Your group have to choose a food truck tale to explore (see the ‘Food Truck Tales’ found here for options).
Read the story together and highlight key information.
Each group has 20 minutes to research online any extra information for their assigned story.
Each Group create a slide (share with teammembers) to summarise their tale. Slides need to include:

A bit about the people behind it.
What makes it unique?
Share your slides with your teacher to combine all slides into a class presentation and have groups share their findings with the class.
