Check other labels (folders) in Gmail for data as the folder structure from your source mailbox to Gmail may appear different post migration. i.e. Inbox may be moved to a different label called \INBOX instead of being part of your Gmail Inbox.
Setup Signature - Gmail > Settings Gear > See All Settings > Signature Field under the main general tab
Filters - For Exchange/Outlook users, these are your Rules equivalent. Rules do NOT transfer over, so please make note of what rules you have in place and be prepared to copy them over.

Set Undo Send to 30 seconds once in Gmail - Settings Gear > Settings > Undo Send select 30 from the drop-down
