For my research on waypoints, I looked at a few videos on a playlist on how a person managed to achieve AI driving using waypoints. Here are the videos I used.
in this video, the creator shows how to create waypoints that the AI car will follow. Some code is created that links all the waypoints that were made together and the car will target 1 at a time.
My thoughts on the video:
I'm happy to use this video to help me create AI because the code is clearly explained, and the final product this creator produces is similar to what I'm looking for.
In this video the creator presents how to make a car follow and target the waypoints created using a few variables such as steer force and distance offset which targets waypoints which are further away, for example if the distance offset is 3, the car will target a waypoint that is 3 waypoints in front of the car. This can be useful for some turns.

my thoughts are that this video is very useful, it tells me exactly how to make the car target its waypoints and I have a few extra variables for customization too.
In Conclusion:
these videos are extremely useful to my project and I will attempt to create a similar AI using the same methods that this creator used. There are many quality of life additions that makes editing track waypoints and the AI easier such as the gizmos line for the waypoints, This allows me to see exactly where each point is and draws a line between all of them. However the downside to these 2 videos is that the creator already has a driving script that the AI car uses so it is already able to drive flawlessly, I do not have a driving script so I must wait until my team mate finishes the driving code.
