SAMUEL YI-HISENG WU
我在一個虔誠的基督教家庭長大,雙親在美國求學時不小心生下我,後來隨雙親學成歸國,在台灣長大。成長時期因為自己是泰雅族原住民和華人的混血等背景,因各種歧視、刻板印象而困擾,也經歷自我認同和價值的許多挑戰。感謝主,我現在感謝上帝創造我這世上獨一無二的個體。我也感謝種種經歷,讓我在個性上更能同理和共感周遭的人事物。
I grew up in a devout Christian family. My parents, who were studying in the United States then, unexpectedly had me during their stay. After completing their studies, we returned to Taiwan, where I grew up. Throughout my childhood, I struggled with various forms of discrimination and stereotypes due to my mixed heritage as an Atayal indigenous person and Han Chinese. This background presented numerous challenges to my self-identity and sense of value. By God’s grace, I have come to appreciate how God created me as a unique individual. I am also grateful for these experiences, which have shaped me into someone who can empathize deeply with the people and circumstances around me.
我的興趣如同我的成長背景一樣多元。曾經想要以藝術和設計為志向,但又無法放棄生物學。母親深厚的文學造詣也深深影響著我,喜歡用寫的方式來記錄自己的生活。我也喜歡和動物相處,喜歡透過自然發現上帝一切美好的創造。後來,因著考上台大動物科系,在學長姐和幾位恩師的引導之下,讓我對於研究開始感興趣。透過大家討論研究、腦力激盪的實驗室文化,上下傳承技術、知識和激勵的互動之中,我在大學時就確立「在大學任教」為我個人的目標。自此之後,不論是實驗室報帳、實驗規劃、教學、報告、帶實習、撰寫計畫、投稿等事情上,我都樂於接受挑戰。 My interests are as diverse as my background. At one point, I aspired to pursue art and design, but I couldn’t give up my passion for biology. My mother’s profound literary background also influenced me, and I developed a love for documenting life through writing. I enjoy spending time with animals and discovering the beauty of God’s creation in nature. Later, I was admitted to the National Taiwan University’s Department of Animal Science and Technology. Guided by senior students and several mentors, I developed a keen research interest. Through engaging in discussions, brainstorming in the lab, and the culture of passing down skills and knowledge, I set my goal during university to become a professor. Since then, I have embraced challenges such as lab accounting, experiment planning, teaching, reporting, mentoring interns, drafting proposals, and submitting papers.
我的學思歷程有別於其他研究者。剛剛進入台大動物科學系之後,我自告奮勇地加入生理研究室,同時協助繁殖生理和代謝生理的相關研究,也藉此學習了解剖生理、組織切片、營養和分生等技術。但是我意識到我更喜歡應用性質的題目,讓我感受到幫助解決改善環境、國家困難、產業問題的快樂。後來就在恩師邱智賢老師的引薦下到了肉品加工實驗,跟隨恩師陳億乘老師進行畜產副產物的加值化開發,並且開始以雞肝水解物相關的保健營養研究在學術舞台上嶄露頭角,這中間也精熟肉品加工、食品化學等相關知識。並且在陳億乘老師實驗室取得了我的台大農學博士學位。 My academic journey has been unique compared to other researchers. Shortly after entering NTU’s Department of Animal Science and Technology, I eagerly joined a physiology lab, where I assisted in reproductive and metabolic physiology research. This experience allowed me to learn techniques such as anatomy, histology, nutrition, and molecular biology. However, I realized I preferred applied research topics that could address environmental, national, or industry issues. Under the guidance of Professor Chih-Hsien Chiu, I transitioned to meat processing research, working with Professor Yi-Chen Chen on developing value-added products from livestock by-products. My initial academic breakthrough was in nutraceutical research using chicken liver hydrolysates. During this time, I also gained expertise in meat processing and food chemistry, eventually earning my Ph.D. in Agriculture from NTU under Professor Chen’s mentorship.
當完兵之後,正在思考未來出路時,收到陽明交大食安所楊登傑老師的邀請,希望我去食安所擔任博士後研究員。恩師楊登傑老師見我猶豫,主動說明這個機會是為了讓我可以學習新的領域。在畜產品加工領域中鮮少有熟悉分析和質譜的研究員,我感到這是上帝賜給我的好機會,所以我禱告幾天後就答應了楊老師的邀請。在陽明食安所的日子,我專注於針對肉品開發多重黴菌毒素的分析方式,另外也參與了肉品中多環芳香族碳氫化合物之檢測方法開發,還有牛乳中氧化膽固醇的檢測方法開發。這都經歷讓我確信開發好的方法會成為非常有利的工具,協助學界研究的進展、政府制定的規範。然而,針對動物性產品開發好的方法並不容易,選擇切入點需要了解產業、熟習動物性產品的物化學性質、掌握加工製程之原理。而這些都是我曾經受過的訓練。研究的路走到現在,我只能承認這是上帝的帶領。 After completing my military service and contemplating my career path, I received an invitation from Professor Deng-Jye Yang of the Institute of Food Safety and Health at National Yang-Ming Chiao Tung University to be a postdoctoral researcher. Sensing my hesitation, Professor Yang explained that this opportunity would allow me to explore a new field. Recognizing the scarcity of researchers familiar with livestock product processing and mass spectrometry analysis, I saw this as a blessing from God. After a few days of prayer, I accepted his invitation. At the Institute of Food Safety and Health, I focused on developing analytical methods for multiple mycotoxins in meat products. Additionally, I worked on methods for detecting polycyclic aromatic hydrocarbons in meat products and oxidized cholesterol in milk. These experiences strengthened my belief that developing optimal analytical methods could significantly advance academic research and help establish government regulations. However, creating effective strategies for animal-based products is challenging. It requires an understanding of the industry, familiarity with the physicochemical properties of animal-based products, and mastery of processing principles — all of which I had been trained in. Looking back, I can only attribute my journey to God’s guidance.
如今,有幸到國立台灣海洋大學食品科學系教書,聽見我這個職缺的退休前輩在水產毒素的輝煌成就,讓我覺得倍受激勵。我要如何將我在畜產品加工和發法開發的經驗複製到水產養殖產業上,將會是我的第一個課題。而如何將我所學統合並貢獻於產官學界,這將會我永遠的研究課題。 I am honored to teach in the Department of Food Science at National Taiwan Ocean University. Hearing about my predecessor's remarkable achievements in aquatic toxin research has been incredibly inspiring. My first challenge will be applying my experience in livestock product processing and method development to the aquaculture industry. Integrating my expertise and contributing to academia, industry, and government will remain my lifelong research mission.
