🍗 Ginger Chicken
Not your average chicken dish.
This one’s all fire, no filler!  Crispy bits of fried ginger hiding in a smoky tomato glaze, juicy chicken half-fried then slow-roasted in its own spice-packed story. Somewhere between a roast and a semi-gravy, it’s messy, moody, and seriously delicious. Not for the faint-hearted.
½ kg chicken (bone-in hits harder, but boneless is fine too)
1 tbsp red chili powder (not shy here)
1 tsp garam masala
1 tsp fennel seeds (crushed but not powdered)
ÂĽ tsp turmeric powder
ÂĽ tsp black pepper
Salt to taste
4 thin slices of fresh gingerÂ
2 onions, thinly sliced
2 tomatoes (ripe ones that squish easy)
1 tsp tomato ketchup (yes, ketchup. just trust.)
½ tsp lemon juice
ÂĽ tsp sugar (to round out the madness)
Fresh coriander, for drama
Coconut oil (or whatever oil you like, but coconut oil = extra points)
🌶️ Step 1: Wake Up the Chicken
Marinate the chicken in chili, garam masala, fennel, turmeric, pepper, and salt. Massage like you mean it. Leave it alone for 30 minutes. Let it soak in all the spices
🫚 Step 2: The Ginger Scene
Heat oil. Fry ginger slices till they’re golden, crackly. Take them out before theyburn.
In the same oil, drop in the chicken. Half-fry it. Take it out before it gets too cozy.

Sauté onions in a little more oil till they stop being raw and start being interesting (light golden).
Meanwhile, give those fried ginger slices a blender spin till you get a thick paste.
Now blanch, peel, and puree the tomatoes.

Add the chicken back into the onion pan. Pour in the ginger paste. Stir like you’re hiding secrets.
In goes the tomato puree, ketchup, lemon juice, and sugar.
Now lower the heat, and let it all roast down slowly without any lid.Â

✨ Throw in a fistful of coriander right before serving. It adds freshness.
